Chicken with Pedro Ximenez sherry and vinegar

Growing up, my dad used cooking sherry in many dishes including my favourite honey soy chicken wings. Consequently I now adore the fragrance of sherry and love experimenting with using it in a variety of dishes. Pedro Ximenez is a type of grape traditionally used to make sweet, rich sherry. It’s a mouthful I know, but the beauty of this dish is in the combination of all elements. The soup is sweet, clean and slightly smoky, the crispy sage adds earthiness, and the goats cheese toast provides a hit of salt as well as a contrasting texture. Continue reading »

I first tried it years ago when experimenting with different ways to use sausages in more interesting ways, and is loosely based on a River Cafe recipe for a quick sausage sauce.
