I am not a baker by any means, but at least I know I can always rely on this recipe when I need to make something sweet. Thanks to the lovely Josephine Howie for the best cake recipe I know!
- 1 cup self-raising flour
- 1 cup sugar
- 1 egg
- 125g butter, melted
- 2 green apples, cored & cut into large chunks (no need to peel)
- cinnamon, vanilla and/or nutmeg to taste
- Preheat the oven to 190C.
- Mix everything together.
- Pour into a springform tin. (Don’t worry if it looks weird and chugly!)
- Bake for 40-45 minutes.
That’s it! This is gorgeous served warm with some custard or cream. It should have a slightly caramelised, crunchy crust and soft, sweet innards. Mmmm, innards….
