The world’s best (and easiest) apple teacake

I am not a baker by any means, but at least I know I can always rely on this recipe when I need to make something sweet. Thanks to the lovely Josephine Howie for the best cake recipe I know! 

Ingredients:

  • 1 cup self-raising flour
  • 1 cup sugar
  • 1 egg
  • 125g butter, melted
  • 2 green apples, cored & cut into large chunks (no need to peel)
  • cinnamon, vanilla and/or nutmeg to taste
  1. Preheat the oven to 190C.
  2. Mix everything together.
  3. Pour into a springform tin. (Don’t worry if it looks weird and chugly!)
  4. Bake for 40-45 minutes.

That’s it! This is gorgeous served warm with some custard or cream. It should have a slightly caramelised, crunchy crust and soft, sweet innards. Mmmm, innards….

  1. Thank you so very much for this recipe Josephine and Liv … you are right .. it is easy to make and gorgeous !! Just as an addition: I had a number of pears that needed to be cooked so I cleaned them and cut them up (chunky) and squeezed half a lemon and a native lime over them before using them as a substitute for apples. I wondered how it would work as the pears are very soft and moist compared to the apples but it worked beautifully 🙂 Also, I doubled the recipe and halved the sugar.

  6. It was great. Made it with a tin of apples so probably goopier than your recipe and sprinkled demerera sugar on the top. Disappeared in 10 mins at playgroup!

  7. I just baked this one and added a layer of thin slices of apple and brown sugar…turned out soo soft and caramelised!!!bast one i have had so far and it is so simple to make. I also used wholemeal flour instead of white so its healthy my little one too!!

  9. I just made this cake. I used instead of the butter, half cup of apple sauce with 1 teaspoon of bi carb soda and I exchanged the sugar for an artifical sweetner & I used gluten free self raising flour with a teaspoon of baking powder, hence making it heathier again. Once out of the oven while still warm I pricked the top of the cake with a fork and then drizzled warmed bush honey over and sprinkled vanilla bean dust on top of that. The honey oozed through the fork holes through to the cake making it moist and tastier. My youngest daughter wouldn’t normally eat cakes with apple in it but she loved this one. Beautiful eaten warm with a squirt of light whipped tinned cream on top. Thank you for this recipe I will cherish this one.

    • I made a further modification on your modification & it turned out SO delicious I just cannot believe it. I’m vegan & GF, I halved the sugar & butter (I used vegan butter) used GF plain flour, added 1tsp baking powder & 1/4 cup apple sauce. I just used a packet egg replacer for the egg. It’s one of the best cakes I’ve ever made, it being chewy on the outside is the BEST!
      I will however, next time only use 1/4 cup raw sugar. I used 1/2 cup & it’s nice but much too sweet for me. I still managed to eat half the cake when it came out of the oven at midnight!! Hehe

  13. Thanks so much for posting this recipe. It is so easy and delicious. My husband suggested pears in it. So I used one apple and one pear. And sliced pears and sugar sprinkled on top. It turned out really well, moist and nice crunchy edges. We had it hot with vanilla icecream. Yummy!

  15. I’ve made this twice now…..so good. I also add a heap of nutmeg and cinnamon – beautiful served warm with your choice of delicious dairy, or as a sweet crunchy treat in my children’s lunch boxes!

  17. Made this last Sunday. I had too many apples so I needed to use them. My son doesn’t like cooked apples. So I peeled the apples and sliced thinly. It was beautiful and even my son said it was great.

  18. Just made this! Had a bunch of apples and didn’t feel like making an apple pie (pastry is way too much hard work!).. This recipe was perfect, exactly what I was looking for and it will be a regular in this house! I halved the sugar though and used 1/4 cup brown sugar and 1/4 cup white sugar. Also used Nuttelex instead of regular butter. AND I added sliced apples on top sprinkled with brown sugar and cinnamon. Also only needed baking for 30mins in my fan forced electric oven 🙂 Was absolutely beautiful, and it doesn’t even seem too unhealthy to me so I’m happy to let me toddler and 7 month old get stuck into it as well 😉 thank you so much, I can’t believe how easy it was! By far the best tea cake recipe I have ever come across

  19. From a girl from the bush, this recipe is so good, with an abundance of apples, my freezer is going to be chockers with apple tea cakes. I did change the butter content to coconut oil and apple sauce and sugar to honey on some. Thanks.

  20. Wow easiest cake ever! I made it in muffin pans, ended up with 9 (large) mini-tea cakes. I made a quick caramel sauce and put a spoonful on top of each one while still hot so it all melted in. YUM!

  22. well that was a great, simple and easy to follow recipe…its in the oven cooking as I type this, I only had one apple so I also put in some frozen chopped cherries and had some organic dark chocolate chips…cant wait to taste the results, thanks for the recipe will be using this recipe for my disability cooking class guys as they will love making this

  23. this works really well – variations I have done include pears, pears with ginger, any other fruit that kinda fits ……. and tonight we are going to try pears, ginger and a little bit of chocolate

    • Any apples are OK! I prefer green as the slight acidity works well well the rich, sweet cake – but any kind would be fine.

  24. Followed the recipe to a T it smells delicious as I’m not the best cook I was worried what to put oven temp on as I have a fan forced oven ?

    • No, I’ve never found it dry though – the copious amounts of butter usually prevent that! Did you change anything/use any substitutions?

  25. if I were to double the recipe, how hot and long should I bake for? I have a LOT of apples to use up 🙂 Made this a few times and it’s always a hit!

    • Great!

      If I were going to double it I’d use a slightly bigger cake tin so it isn’t too deep, cook for the same time and check with a skewer – keep checking and extending cooking time if needed every five minutes.

      Did you try it yet? Any recommendations?

  26. I baked this yesterday. I made a double batch exactly to the recipe and honestly it is just beautiful. Next time I’ll halve the sugar as I do believe it will be even better with less sugar. (I don’t have a sweet tooth). Thank you for this recipe.
